Anyone canning yet?

    I've made 4 batches of salsa and one batch of freezer spaghetti sauce so far. What have you been doing?

    Also, we have a new paste tomato that we are going to try make sauce with this year. It's an heirloom called Pittman Valley Plum. Looks like a red banana pepper, and our plant is going crazy with them. I need to check out my Ball book of preserving for a plain old sauce recipe!

    OH so funny you bring this up. I've read the sides of freakin canning kits but I want to can everything and anything. ONline it says I need a "pressure Canner" dudad???? HELP!! Please! (My freezer is full) I need alternate saving solutions and a standalone freezer isn't going to do it.

    @crazycookinchick - Pressure canners are necessary for canning low acid vegetables, such as beans, and things like meat. You can can tomatoes and jams and jellies just using a water bath canner. Basically you submerge your canned good in boiling water for a set period of time to kill all bacteria and get a good seal.

I have only made several batches of salsa because the kids eat it as fast as I can make it.....I usually put away fresh corn and tomatoes and I usually make freezer jams and grape jelly....I guess I will be sorry when it is cold outside and I am wanting something fresh....

    Because we live in the northwest, our season for canning is just starting. This weekend it's dill pickles and blackberry jam. Then it will be cannned tomatoes and salsa next weekend. Then will be peaches, peach jam and chutney.
