*Made for the July 2019 "Tomato" Recipe Challenge*

Amazing salad! I cut the recipe back quite a bit using just one avocado about 1/4 cup corn and a handful of tomatoes. I pretty much eyeballed everything :) I can definitely see this going great with some grilled meat but I ate this for lunch with some tortilla chips. Loved!

Grandmommy's recipe calls for garlic and 1 tsp. red pepper....is that crushed red pepper flakes?

When I was on vacation I had a very similar tomato, corn salad at a restaurant which also contained green onions, quesco fresco, fresh basil, feta and a Chili Lime Vinaigrette. A riff, as it were. Totally want to recreate this soon.

It is very similar Janet, I made yours last year! Love both :) I was assuming this recipe had meant red pepper flakes, but I could be wrong? Worked out good regardless!
