Avocado Sweet Corn and Tomato Salad

This colorful and tasty salad is a favorite of both my daughters. I ate this at a local favorite restaurant and worked until I figured it out. This salad pairs well with grilled meats or fish. I hope you enjoy it as much as our family has.
Ingredients
- 5 avocados cut in 1/2 in chunks shopping list
- 1 1/2 c. grape tomatoes shopping list
- 1c. sweet corn (frozen super sweet is best) shopping list
- 1 large bunch cilantro chopped shopping list
- 2 cloves chopped garlic shopping list
- 1/3 c. finely minced sweet onion shopping list
- juice of 2 limes shopping list
- 1T. honey (you may use sugar) shopping list
- 2T. apple cider vinegar shopping list
- 1/4t. red pepper shopping list
- salt and pepper to taste shopping list
How to make it
- Mix lime juice, vinegar, honey, red pepper, salt, and pepper in large bowl
- Add all other ingredients and toss to coat
- Chill and serve

I had this today and I have to say it was great. First you ate with your eyes with the bright red, greens, and yellow playing against each other. Than it had a nice sweet and tangy finish. This is a sure summer hit!
