Avocado Sweet Corn And Tomato Salad Recipe

	Grandmommy / All my dishes 1 year, 9 months ago This colorful and tasty salad is a favorite of both my daughters. I ate this at a local favorite restaurant and worked until I figured it out. Ingredients

5 avocados cut in 1/2 in chunks

1 1/2 c. grape tomatoes

1c. sweet corn (frozen super sweet is best)

1 large bunch cilantro chopped

2 cloves chopped garlic

1/3 c. finely minced sweet onion

juice of 2 limes

1T. honey (you may use sugar)

2T. apple cider vinegar

1/4t. red pepper

salt and pepper to taste

Directions

Mix lime juice, vinegar, honey, red pepper, salt, and pepper in large bowl

Add all other ingredients and toss to coat

Chill and serve

I had this today and I have to say it was great. First you ate with your eyes with the bright red, greens, and yellow playing against each other. Than it had a nice sweet and tangy finish. This is a sure summer hit!
