    Chicken Keniev

    Had bookmarked this recipe a long time ago and finally got around to trying it the other evening. As always I have to grin at Keni's large quantities of food. :) This recipe called for 2 1/2 lbs. of chicken breasts/thighs. Needless to say, I cut the recipe down and just eyeballed the ingredients since I was only cooking for two. Like Keni, I used b/s thighs but I think the breasts would have been easier to work with since it's a larger cut of meat and would have been easier to wrap around the herbed butter.

    These have a lot of flavour although it's hard to discern the ancho chile powder and lime, but all together it's lovely. Hubby found it too rich. My fault as I spooned the butter over the thighs when I served them. I didn't grill them just because I didn't feel like going out to start the BBQ. :) I pan fried them initially and then finished cooking them in the oven, sprinkling the panko and grated cheese over top.

    Not great lighting for taking my photo. The fall days are upon us and the sun's going down earlier. :) Thanks Keni! :) They were yummy. There was one left which I ate up for breakfast yesterday morning. :)

    Glad this turned out well for you Janet! I plan on making this one of these days. Good to know the oven worked, I have those days too where I don't want to fire up the grill :) Looks so good though!!

    Gosh that looks delish Janet! I've made Chicken Kiev in the past and love it..a little time consuming, but well worth it:) I have always baked mine, so you did good! Keni would have LOVED your pic:)

    I can see how the thigh meat and extra butter could make it richer tasting. Maybe some extra lime juice on the cooked chicken could help cut the richness next time?
