Ingredients

How to make it

  • In small bowl, combine 10T of soft butter with cilantro, oregano and 1t ancho powder.
  • Place on plastic wrap or waxed paper and roll into a log about the size of a stick of butter.
  • Place in freezer for at least 30 minutes.
  • Pound chicken to about 1/4inch
  • Season lightly with salt and pepper
  • Cut off sections of the frozen butter and place 1 section onto each piece of chicken.
  • Roll chicken pieces up and secure with toothpicks. Try to tuck the ends in, too.
  • Combined melted butter with 1t ancho chile powder and lime juice.
  • Combine the panko crumbs and manchego cheese
  • Grill over medium high heat, starting with seam side down, to sear it closed, until done, turning once. Start basting with the lime butter about about the halfway point and continue basting until chicken is done.
  • Once chicken is done, sprinkle the bread crumbs/cheese over each piece of chicken.
  • Close lid on grill and let sit about 1 minute. Crumbs should slightly brown, and cheese melt a bit.
  • Let rest a couple of minutes before serving.
  • Don't forget to warn guests about the toothpicks! :)

    Made this the other night. Changed a few things and didn't grill it. I enjoyed them but Hubby found them a bit rich. More in IMI11.

    Like the look of this and will certainly go for it one day. Chiuckieb - manchego in the American sense is a mild cheddar.
