    **July Recipe Challenge--Sandwiches**


    I found this recipe tucked away in my recipe box. A recipe that I found thanks to Mommyluvs2cook. I didn’t realize that until after I made it and saw her review from the old IMI group. What a great find! This sandwich is not only unique, but AWESOME! If you like spanakopita, you will definitely like this grilled sandwich. I used fresh spinach instead of frozen and sauteed until wilted. Not a big oregano fan so I omitted the oregano. I wish I would have omitted the nutmeg, but I probably added too big of a pinch. A pinch is very subjective. Love Feta cheese and it really didn’t need the slice of provolone. The spinach and feta can easily stand on its own.

    Looks like a healthy sandwich 'cept for the cheese. Bought some rye and pumpernickel. Will be using home grown garlic too.

    Hi, Pointsevenout! Oh, YUM! Rye bread would be good. Just using Feta cheese wouldn't be that bad. That's all this sandwich really needs. I've never tried growing my own garlic. I'm sure it's much better than anything in the store. Can't way to hear your results.

    Well I'm stuffed. Garlic taste lasts a while after consumption. Couldn't get all 4 sammies in the grill pan at the same time, so settled for 3.
