    Korean Chicken Lettuce Wraps by Chuckieb

    This was so good! I love the marinade, it's so flavorful you really could eat this as-is over rice with no extra sauce!
    I didn't have the gochujang paste for the sauce so I searched the internet and found a homemade substitute with crushed chili flakes. Wowsers, spicy but good!
    I didn't have any sesame seeds either, but I didn't miss it.
    I served it with sesame rice (rice steamed with garlic and onion, then tossed with sesame oil) as I didn't have jasmine rice.
    I did make the gochujang sauce, and it was great. Gochujang Sauce But I didn't review it as I didn't have the authentic paste and sesame seeds etc. So when I get the gochujang paste I will add a review then! :)
    I will definitely make it again!

    They look perfect Shona! So tickled you liked them. I actually saw pre-made Gochujang sauce at Costco today at a really good price. That sesame rice sounds wonderful. I'd like to try that.

    Janet, Superstore carries the sauce too. Called Memories of Seoul. I was hoping to find the paste so I could make the sauce. For the rice, I add a whole garlic clove and chop the whites of green onions and add it to the rice before cooking. Then chop the remaining green onions and toss with sesame oil after it's cooked. I sometimes add finely diced carrots before steaming as well, and toss the rice with frozen peas in the last 3 minutes of cooking. It's the kids favorite way of eating rice besides fried rice! :)

    I love Korean pickled carrots and cucumbers Michelle! Radish's are great pickled too, but they can have a funky smell after pickling, lol, but still taste great! :)

    When I finally got to go to PF Chang's, I took my foodie's advice and tried the chicken lettuce wraps. We normally don't get appetizers, but they said to, so... I'm glad I did as it was really the only item we all liked. We never went back and now I see there's no reason to because of this recipe. Thanks for bringing it up.

I used chicken breast, but I do think thighs would have been juicier, and the only lettuce I had was some large red leaf lettuce. The pickled carrots are just as good as I imagined them to be, although I didn't spiralize them, I just match-sticked them :) I love radishes in lettuce wraps so I added a few of those as well. Michael went back for thirds, which means he liked it a lot! He said the flavor was awesome :)

    Thank you Nadine!! Yes, if your family would like to just eat it on rice, I think it would be delicious that way, and then you could still enjoy it in a lettuce wrap :) :)

    Nadine, I have a lettuce wrap recipe that we like and I serve it over brown rice all the time. We had a terrible time trying to serve it in the lettuce leaves and gave up. Honestly, the lettuce didn't seem to go with the filling at all :p
