Pumpkin Cookies with Chai Icing

    Pumpkin Cookies With Chai Icing by Chuckieb

    I don't know how I overlooked these cookies before! It is exactly like another favorite cookie I've made from here with the exception of the Icing. In my IMI review of those cookies I said "I might try a spiced glaze on these next time.." {Pumpkin Spice Cookies} Well, these cookies have that in the Chai Icing!

    The Chai Icing is delicious on these cookies, and takes on a nice warm colour that is perfect for Autumn. The warm colour is indicative of the flavour as the Chai tea is so warm and comforting from the spices in it.

    I wasn't sure if the kids would like them, but without telling them the icing was different they gobbled them up as they have all the other times I've made these cookies! I've also made the same cookies with an orange glaze, lemon glaze, pumpkin-spiced glaze and vanilla. The Chai icing here is nice and thick, and the warm milk tea seizes the powdered sugar slightly so it sets up hard. Perfect for stacking the cookies later in a jar......if they last that long! ;)

    I made these with all vegan margarine and lacto-free milk Manella. It makes a lot so it's perfect to share, though not sure if young kids would like it? I haven't tried freezing them since they get eaten so fast around here! But I imagine one could freeze the unfrosted cookies. :)
    I love Chai tea, Janet! And that's how I like it too, steeped in milk on the stovetop (minus the butter of course, lol) So much better than boiled water poured over the tea bag. :)
    I'd love to send you a cookie to try Diz! You definitely couldn't stop at one, Lol! ;)

    Shona, I`ve frozen these cookies with icing on in the past and they`re perfectly fine. I froze my last batch on two fall platters covered with tinfoil and then pulled them out on two separate occasions for company.

    The last time I made them I used loose Chai tea leaves in a tea ball in the milk but I ended up with a few small bits of tea leaves in my icing. Not a biggy but a teabag is easier and works better.
