Savory Cheddar Zucchini Muffins
Always nervous about trying out a new recipe for Thanksgiving I had the opportunity to try these on a family dinner. I Followed the recipe with a precision I usually decline and they were perfect. Picture added. I wanted to give this a test drive prior to Thanksgiving. I used mini muffin tins and reduced the cooking time to about 20 minutes. They came out absolutely perfect and a small savory bite like this is the perfect size at an out sized meal.
Keni had made these before and also found the instructions perfect. I was glad for the warning about not using paper liners but I did have to work at getting them out of the tins in one piece. The picture shows that it all worked out in the end. Makes about 36 mini muffins.
