Ingredients

How to make it

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 cup muffin tin with cooking spray. Do NOT use paper liners - they stick to the muffins.
  • Mix the flour, baking powder, baking soda, and salt in a bowl.
  • In another bowl, stir together the butter, egg, milk, zucchini, and garlic until well blended. Mix the flour mixture into the milk mixture, about 1/2 cup at a time, stirring between additions, until the flour mixture is incorporated. Fold in the Cheddar cheese, Parmesan cheese, and crumbled bacon, and pour the batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 30 to 35 minutes. Serve warm. Refrigerate leftovers.

    Followed the recipe with a precision I usually decline and they were perfect. Picture added. I wanted to give this a test drive prior to Thanksgiving. I used mini muffin tins and reduced the cooking time to about 20 minutes. This produced 36 mini muffins. They came out absolutely perfect and a small savory bite like this is the perfect size at an outsized meal.

    Hi everyone! I'm not sure why some people had trouble with the recipe. I noticed on a few reviews people mentioned that they did *not* drain the zucchini. Hello? The recipe doesn't tell you to drain the zucchini - it needs the moisture. Anyway, Keni, I'm glad you liked them, and I hope they work out for anyone else who tries them!

    These were perfect! Seriously, I can't figure out what went wrong with those who had a problem(on the other site). I am adamant about making a recipe nearly to the letter of how it's submitted in order to rate it fairly, and this was no different. I followed the recipe exactly other than I added a dash of cayenne and black pepper. There were no issues of saltiness, and they certainly weren't over OR underdone. They were lovely both in taste and texture. I am so glad I made these as a "test". Now, I will be making them again because they disappeared so quickly, this time! :) Oh, some of us did add a lil butter to these, while warm...mmmmmm....! Thank you for the recipe! :)
