5 Minute Cheesy Enchilada For One
I have been super busy the past couple of days with hardly any time to eat much less cook. I found this using "quick dinner." I only had 7" tortillas so I used 1/2 of a can of chicken and 6 Tbs each of the sauce and cheese. Mine took 1.5 minutes in the microwave. I think it could use something else and I will add onions when I make another one later on. But, five stars for how quick it was, how tasty it was and for a recipe for one. I will definitely make this again - tonight, for starters! :-D

I love how easy this sounds. We have crazy evenings all the time, so this would work, even if I quadrupled it for the family. The look of yours kind of reminds me of an enchirito from Taco Bell (even though I know there's chk. in there, not beef)... I love those!!

Thank you, ladies! Michelle - looking at my leftover enchilada sauce, I think one could get four or five of these out of one of the small cans of sauce. Very handy! There was a bit of splashing in the microwave of the sauce but not too bad. :)
