Ablondigas Inspired Meatball Soup

    Yay, I cleaned out a little chunk of my freezer making this! I had to make quite a few small changes to get this to mine and my families liking. I had meant to use ground venison, since I have it, but pulled out ground beef because I had mommy brain for a second :) Used almond meal in place of corn bread and almond milk in place of buttermilk. Instead of hot peppers I threw in a chopped bell pepper so the kiddos wouldn't burn their little mouths :) I had exactly 6 cups of frozen homemade enchilada sauce and used some fresh diced garden tomatoes from the freezer as well. Sorry, could not bring myself to add the pasta, so I subbed some frozen chopped yellow squash. I know it sounds like a ton of changes but I really don't think it changed the flavor a whole lot, and btw this was delicious. I thought that much enchilada sauce would be overboard, but it's NOT. The flavor was bold and with the added toppings, awesome! I did the cilantro, pepperjack cheese (raw), squeeze of lime juice, and my own addition, a little chopped avocado. YUM!

    I had to look up ablondigas. I've never heard it before. Amazing how much stuff I am still learning from this place. Well, whatever you did to it - it looks fabulous! I like the enchilada sauce idea. Love that stuff. Really yummy looking. Wonderful picture!

Watching Walking Dead with hubs as well as writing up this long review :) I'm surprised the word zombie didn't get thrown in there somewhere :P Thank you ladies, I can't believe you have never heard of ablondigas Frankie! You have to try it, it's such a filling, delicious soup!
