Another chicken recipe from Pleclare

    Orange Balsamic Glazed Chicken
    I thought this was super delicious! I did cook it a bit longer than instructed. The cooking time just seemed a bit short to me for chicken. I had only one pound of thighs, but that's fine with me because I wanted all the sauce for rice.
    I used my electric skillet for this, too! I'm always looking for a reason to get it out of the cupboard and this worked well in it.
    I also did a "chicken" search of Pat's recipes. She has 589, so that should keep us chicken lovers busy for a while! :) Thanks, Pat. Cheers.

    I didn't use the arugula, as you can see, Mr. P. I guess the original recipe meant for the kinda tart arugula to offset the sweet of the marmalade, but I liked it without it. Its a really great dish!

    I made this a couple nights ago. This was an excellent, excellent. I loved it. My pic looks nothing like Pleclares though. Mine turned out pretty brown. I did double the sauce ingredients including the marmalade (which is something new to me) I also did not use arugula. I will be making this many times. Great recipe. Thanks again to Pleclare.
