How to make it

  • In large pan,heat oil over med-high to high heat.
  • Season chicken liberally with salt,pepper and poultry seasoning. When oil is hot and ripples,add the chicken and brown for 5 mins.,then turn and sprinkle with rosemary. Cook till chicken is tender and cooked through,about 5 mins. more.
  • In small bowl,stir together marmelade,vinegar and stock and pour over chicken. Cook 2-3 mins or till the sauce has thickened and become a thin glaze. Add scallions during the last min. of cooking time. Arrange on serving platter and serve topped with arugula greens...

    Made it with chicken breasts and a bit more scallions and it was delicious...not too sweet, very citrus tart and the bitter greens were a good counter point. Made couscous with chopped zucchini as the side....extra garlicky side....LOL. No kissing

    I made this tonight and I thought it was outstanding. I loved the mix of the orange and balsamic. The scallions were still a bit crunchy so their flavor mixed in there as well. The only thing I did differently was I cooked my chicken a bit longer - probably 15 minutes or so - before I put the glaze ingredients on. I also cooked that for about 5 minutes. I served this on rice because I just knew it would go great with the sauce and it did. Added my picture, too. More here:
