Another Pleclare chicken recipe

    Sunshine Chicken
    Sunshine Chicken
This has got a nice sauce that thickens up wonderfully. I cut the sauce recipe in half but only had three pieces of chicken. That gave me a lot of opportunity to keep piling it on every 15 minutes or so. I was wishing I had cooked it a bit longer to get it a bit more burnt, but that is just a personal preference. :)
The only complain is that it is a tad salty but I am thinking that a reduced sodium soy sauce would cure that. Or maybe a bit more honey. That sounds good, too. Would be great with rice but I was doing three other things at the time :-P and forgot to put it on and it was too late by the time I remembered.

Very nice picture Frankieanne:) I usually only use reduced sodium soy sauce, the taste is still there, but not as salty. More honey would also be good to off set the saltiness...anyway, nice review!

Thank you, Marie. I have soy sauce on the grocery list for this week and plan on getting the reduced sodium kind this time around. Although I'm still liking the extra honey idea. :)

That looks really good, Frankie. I like the ingredients. Did it come out crispy or kinda chewy?

No, the skin wasn't crispy, MrP. In fact, I took it off when I ate the leftovers cold the next day. Actually, this one may be a good one to try without the skin. That's one of the reasons I had wished I had let it cook a bit longer - to burn and crisp up that skin. :)
