Apple Pie Pancakes

    Recipe by Crossfire: Apple Pie Pancakes/saved
    Didn't rate these because I made too many changes to do a rating justice.
    Has a good apple flavor and a medium puff. Browned nicely at 3 minutes on the first side and 2 on the flip.
    Used Apple Pie Spice to save a few pennies. This recipe can be made up with spices on hand in any pantry.
    Didn't have the apple chunks to add to the batter.
    Used applesauce instead of apple juice, just because I had it, which led to adding some buttermilk to make the batter thin enough to spread nicely on the griddle.
    Just wondering about the butter measurement. It's kind of odd. Why not just call out 1 Tbsp butter. Could it be a typo that should have read 3 Tbsp butter?
    Someone else please make this recipe and follow the rules.
    Made 6 cakes. One for me, one for mother and 4 for the freezer.
    She got Karo light syrup and I got peach chutney.

Anyway, I went ahead and did 3 Tsp. , but of oil. Also I was planning on making that apple spice mix you made but realized I did not have the cardamom, so I used cinnamon. Also used fresh diced apple. Very nice pancakes!

    Beautiful picture, ml2c. Pancakes always looks so good but (to me) they are so filling. If I have them for breakfast I usually want to go back to bed! Last time I had pancakes I had them for dinner. :)

    Thanks Frankie! It doesn't seem like 3 tsp would fit in a Tbs but I guess it does ;) I do admit I didn't eat the pancakes. I tried 2 bites of my daughters stack, because I have the same problem as you! I can't eat big or heavy breakfast, only when we do breakfast for dinner too!
