Asian-Inspired Grilled Chicken & Stir Fry

    I made this in my cast iron grill pan since it hasn't stopped raining in weeks. Worked great! I decided to make this last minute even though there is an overnight refrigeration and marinating time. The dipping sauce only got about an hour in the fridge (still delicious though) and I only got about 30 minutes marinating on the chicken, which I was surprised at how flavorful it was. I didn't have the snow peas so I decided to throw some green onions in cut about 2 to 3 inches to mock them ;) (I know, nothing the same but they were good in there). I made a small amount of rice to go with this and in the end just stirred it into the veggies. This was an AWESOME meal!

    I'm glad you were "brave" enough to make this even without the total marinade time. I'm always seeing a recipe that looks good and saying "Darn!" because I see it one hour before I want to eat and it requires overnight marinating. That's a great idea about the green onions as a substitute for snow peas. I may snag that one day, if you don't mind. Looks like a snow pea to me! :D I love the picture. It does look awesome!

    Thank you so much for trying my recipe out and for sharing your review and gorgeous photo!! I'm pleased to hear it was flavorful even with a short marinating time. With stir-fry I think pretty much anything goes and I would have added green onions to mine if I had them on hand that day ;-)
