Bacon and Cheddar Breakfast Quesadillas

My first breakfast quesadillas! Is pepper jack cheese a type of cheddar or just a typo or misunderstanding? Regardless this was yummy :) I used the fold over technique which I think helped so much with keeping all the stuff inside. Skipped the sour cream but did use the salsa! Very good!

Jack cheese is short for Monterrey Jack cheese. Co-jack cheese is a combo of Colby and Monterrey Jack cheese. Cheddar is a different type cheese. Pepper Jack cheese is Monterrey Jack cheese with bits of spicy peppers minced up in it. If there is any great appreciation in price from Jack cheese to Pepper Jack cheese, one could always go with plain Jack cheese and mince up their own blend of spicy peppers.

I eyeballed my ingredient because I used 1 tortilla (the size between taco and burrito) for mine. I made used 2 pieces of bacon which was actually very generous and I did notice it said it made eight servings...but I'm thinking by large tortillas she meant burrito size which are pretty huge..
Thank you for the breakdown on the cheeses PSO, I knew you'd come through for me! I am going to follow your advise with the pepper jack and monterey jack by adding in the pepper myself if it's cheaper...I like that! So the recipe title should read Bacon and Jack Breakfast Quesadillas.
