Baked Acorn Squash

Cheffiona posted this recipe for Baked Acorn Squash . I picked one up at the store thinking I'd try it never having eaten one. I love sweet potatoes and butternut, but hubby hates them. So hers had cinnamon in the recipe and picked it for that reason. Cinnamon, butter, brown sugar! What's not to love? It was amazing and so easy! Even the hubby liked it(cinnamon hooked him too). I could eat this stuff every day. Thanks Chef!

This looks SO GOOD Sassy! I made a recipe the other day using an acorn squash, but I only used half and still have the other half that I need to do something with...this sounds perfect! Beautiful picture btw!

Great photo! Interesting that it's baked upside down first and then turned over. I'm going to try that next time.

I LOVE acorn squash baked with butter and brown sugar, but can't get my husband to like it. He tried it once years ago and said once was enough for him.

My dad absolutely loves acorn squash. This is how my mom cooks it for him but I don't think she uses any cinnamon. I love the pictures you take!

That looks great sassy, nice picture. We both love acorn squash and I've been making them for years, I've never thought of using brown sugar.

This is the way mother likes it and wants it. But whenever she asks for some I always try to find a new way to make the squash. Trying to broaden her horizons, you know. I still get grief for not making it with butter and brown sugar.

Sassy, did you grease or line the baking dish with foil when you placed the squash cut side down?

Foil and sprayed the pan the second time, I didn't the first time and they actually released better. I always foil my pans, saves washing lol!

Sassy, I love the no-stick foil for lining pans when I make cornbread or brownies. They just lift right out and I can cut them neater on the cutting board than I can right in the pan. I have to make this squash soon, even if my husband doesn't like it. They've had some really small ones at the store about the size of a large orange. Just enough for two. Or one, if I have to eat his portion, too!
