    I made this a couple of weeks ago. I followed most of the recipe. All except marinade time and baking. Still kind of gun shy with chicken in the oven. I did it on the stove top. So I guess the title is misleading. [ Especially to those that may have a 2nd glass of wine or be hitting the heavy stuff : ) ] I marinaded overnight and also added some of the pineapple juice to it. I used 7 b/s breast and doubled everything. This came out perfect. So tender and moist. Thank you SilverQueen for a great recipe

    That's a different combination of things to put on chicken. I never would have thought of pineapple and orange and chicken. I'm thinking a little brown sugar may go along as well, although perhaps then it would be too sweet. Thanks for showing us!

    I know we would love this...maybe not the daughter though, she seems to not like sweet/meat combo. I may make her eat it anyway, I'm just mean that way ;)

    Fresh pineapple juice is an excellent ingredient for a marinade because it contains one of the most powerful natural tenderizers, the enzyme bromelin, which is very efficient in breaking down protein. This enzyme is destroyed if it is heated, so when using pineapple juice for the purpose of tenderizing meat, the juice must be fresh. (Any previously cooked or canned pineapple juice has no effect on tenderization).
    So stick some fresh pineapple juice in with your marinate for tougher cuts of meat to help it down the path of delicious and tender.
