    Trying to use up Roma tomatoes from my garden and found I had this bookmarked. The basil is fading but I got enough to cover my fillet. Cooked it for 25 minutes. It was the perfect thing to go with my last lemon cucumber. Dang. Summer is over for sure!

    I eat them plain, ml2c. Lemon cucumbers are mild and I've never had a bitter one. The best way (for me) to eat one is when they are just turning yellow and the peel is still tender. The yellower they get, the thicker the peel gets. When they are just a bit yellow, I like to pick them right off the plant and eat the whole thing while I stand in my garden. :)

And I wish I had the problem of trying to use up garden tomatoes - I wasn't able to plant any and so what I have volunteered from seed from last year's. It was so hot and dry here all summer that they never grew much and now that the growing season is almost over, they are blooming and have lots of little green tomatoes forming that will never ripen. And I only have one hummingbird here that hasn't left for vacation in the south yet!

    I understand about the thick skin...that happens with my cucumbers that I grow too (mine are just plain ol' cucumbers). Too bad about your little tomatoes Gkalia!! What type of tomato is it? If its a small type tomato like cherry or grape I would just pick it before the plant dies and put them in the windowsill. Big tomato though I don't think would work....

Other years that the frost came before all of the tomatoes were ripe, I've been able to ripen them by wrapping them in newspaper and storing in my garage...but these were full size tomatoes and I don't think they are far enough along to do that. Probably they'd just rot before they turned red. :(
