Recipe by Elgourmand: Basic Enchilada Sauce
Made this for some cheesy chicken enchilada soup.
Has good flavor. Does not make 3 cups. After 10 minute simmer it is only 2 cups. But that's all I needed.
I'm by far no expert on enchilada sauce. It's hard to rate it well. But I like the savings from the "ready made" at the store.

When you make this recipe, which is real easy, let me know how the comparable taste plays out since I'm a novice at this type of sauce.

sure thing! don't know how quick it will be as the weather is getting warmer and more humid...I'll be doing more grilling than anything. Of course there is no rule that says I can't bake some enchiladas on the grill, now is there?
