Bean, Cheese, And Corn Enchiladas
I've been craving enchiladas lately and corn was buy one, get one free where I shop so I wondered if I could find an enchilada with corn in it. Used "corn" and "flour tortillas" in the ingredient search and this was on the first page of results. While it was baking, I decided to clean out the refrigerator and found a couple of stray green onions so I quickly chopped them up. They went on after 10 minutes of baking time. Delicious and no meat and I'm set for the weekend. :) I think this is a wallet friendly dish especially if you make four as I did.

Oh does that ever look delish FA! I've been craving enchilada's as well! I really do like using flour tortillas when making enchilada's,,they seem to hold together better than corn. Love your pics!
