Beet Goat Cheese Napoleons

    I bookmarked this recipe four years ago (can't help but grin at Keni at times like this with her strict policy of a short bookmark list) and finally got around to making it with dinner last night.
    Roasted Golden Beet Goat Cheese Napoleons With Citrus Vinaigrette
    It will be of surprise to no one when I say I am a major Luisa Groupie. Her recipes are top notch and this one is no exception.
    First off I couldn't find golden beets so I bought red ones. And secondly my beets were little and her recipe calls for big ones. But I forged on. :) I got the beets baking and then whipped up the goat cheese mixture. I like goat cheese but I don't LOVE goat cheese. I bought a little 4 oz. log of Herb Goat cheese, added about 4 tbsp. of whipping cream to it and fresh chives from my garden. I LOVED this goat cheese. I think the cream sort of took that sharp edge off that's usually there. The recipe says to 'spread' the goat cheese on the beet rounds but I actually made little patties and then placed them on top of the beets as I was worried the red dye from the beets would leach into the goat cheese but it didn't really.
    The Citrus Vinaigrette is lovely and a nice contrast to the earthiness of the beets. I actually had some candied pecans in my pantry that I'd made up a couple of months ago for a soup recipe, and so now I was set for assembly.
    How to make it look as clean and perfect as Luisa's picture? Didn't happen. After reading the recipe over a couple of times I saw that she said to cut the Napoleons in wedges with a sharp knife, but of course my beets were just small so on her advice I just cut them in four horizontally.
    And as you can see, it turned out wonderfully, even if it doesn't look like hers exactly. :)
    Although the recipe looks a little daunting it's really not and it sure looks special on your dinner plate.
    As always, my hat is off to Luisa and I highly recommend everyone to try this recipe out. It's smashing. :)

    I had golden beets for the first time a couple of months ago but never have looked for them. I'll have to see if the stores have them around here.

    Thanks everyone! It was soooo good and sooo pretty. I'm excited to be on the look out for golden beets eventually. Luisa does a variation as well where she puts pesto in the goat cheese mixture and then changes the vinaigrette up to a Balsamic/EVOO mixture. That'd be awesome too.
