Borinda's Parsnip Croquettes

    Perfect! I did have to make a few alterations to get them the way I had eaten them before... didn't whip the parsnips and carrots, simply grated them and parboiled them for about 5 minutes before adding them to the cooked onions...
    only used 2 TB butter for the onions...
    used NO butter or breading for the frying - simply sprayed a skillet with cooking spray and "fried" them in that.
    The patties need nothing else to enhance the taste - the carrots and parsnips were fresh and sweet, and the fresh chives and seasoning added all the remaining flavor. Good stuff, and good for you!
