Ingredients
  • 1 1/2 pound parsnips
  • 1 small onion
  • 6 Tbsp. sweet butter
  • 2 Tbsp. flour
  • 1/2 cup milk'
  • salt and freshly ground pepper
  • 1 Tbsp. chopped chives
  • 2 eggs
  • 1 cup fresh breadcrumbs or panko
  • (2 tbsp. oil)

Directions
  1. Peel and roughly chop the parsnips.
  2. Cook them until tender and then whip them but DO NOT PUREE.
  3. Finely chop the onion and lightly brown that in 4 Tbsp of butter.
  4. Stir in the flour and cook for 2 - 3 minutes, do not brown.
  5. Whisk the milk into the onions off the heat and then once mixed in cook until thickened. (essentially this is veggie plus a roux)
  6. Stir in the parsnips and season with salt, pepper, and chives.
  7. Chill this mixture for a couple of hours minimum.
  8. Beat the eggs and set aside.
  9. Form the parsnip mix into patties and beware, this is a soft mixture, not a firm one to handle.
  10. Dip into the eggs and then into the breadcrumbs.
  11. Refrigerate again, this helps the handling in my opinion.
  12. When ready to serve saute the patties in 2 Tbsp of butter with 2 Tbsp of oil, adding more if necessary. Or... try the indoor grill they can't fall apart on like I'm going to do!!

YOU are a jewel, my dear! I am picking up the ingredients this weekend and will make up a batch. They sound very much like what I had at Whole Foods Market (except missing the carrots, which I will just add in). I will post a picture, if you like. I'm so glad you found the recipe!

Oh yes, these are exactly what I was looking for, borinda - sweet, slight crunch, wholesome (I had to omit most of the butter and all of the bread crumbs, but it didn't affect the flavor at all). These will be on the regular rotation. I did use part parsnips and part carrots. To cut down on the fat, I fried the onions in 2 TB butter, and didn't dip or coat the veg patties...I just fried them in a pan sprayed with cooking spray, and they came out PERFECT! I just grated the carrots and parsnipss and steamed them for a few minutes before adding them to the onions - I preferred to not whip them so they would be more like what I found at Whole Foods...I'm sure the whipping would work fine, too. I can't thank you enough for this one, Bori!
