Parsnip Croquettes

- 1 1/2 pound parsnips shopping list
- 1 small onion shopping list
- 6 Tbsp. sweet butter shopping list
- 2 Tbsp. flour shopping list
- 1/2 cup milk' shopping list
- salt and freshly ground pepper shopping list
- 1 Tbsp. chopped chives shopping list
- 2 eggs shopping list
- 1 cup fresh breadcrumbs or panko shopping list
- (2 tbsp. oil) shopping list
How to make it
- Peel and roughly chop the parsnips.
- Cook them until tender and then whip them but DO NOT PUREE.
- Finely chop the onion and lightly brown that in 4 Tbsp of butter.
- Stir in the flour and cook for 2 - 3 minutes, do not brown.
- Whisk the milk into the onions off the heat and then once mixed in cook until thickened. (essentially this is veggie plus a roux)
- Stir in the parsnips and season with salt, pepper, and chives.
- Chill this mixture for a couple of hours minimum.
- Beat the eggs and set aside.
- Form the parsnip mix into patties and beware, this is a soft mixture, not a firm one to handle.
- Dip into the eggs and then into the breadcrumbs.
- Refrigerate again, this helps the handling in my opinion.
- When ready to serve saute the patties in 2 Tbsp of butter with 2 Tbsp of oil, adding more if necessary. Or... try the indoor grill they can't fall apart on like I'm going to do!!
