Butterscotch Pudding

    Recipe by Pleclare: Butterscotch Pudding/saved
    Mother was in the mood for pudding and I was tired of spending good money on store puddings.
    No eggs in this recipe. Cornstarch is the thickener. It starts getting thick even before it starts to boil. Continues to get even thicker during the 1 minute boil. Doubled the recipe and it made 2 globular stemless wine glasses 'pert near full.
    Has a rich creamy flavor. Mother declared, it's goooooooooood, even before she finished swallowing the first spoonfull.
    I've enough fixin's to do a double recipe again. It's just a matter of how soon.

    Bakerme, I have lactose issues also, if you can find it, So Delicious Coconut Cream for Coffee works well instead of cream . It is lactose, gluten and soy free. It is what I use in place of cream..Silk Milk also..

    Full disclosure...I used light brown sugar instead of dark brown. I was going to add a tablespoon of molasses in the mix but I forgot.

    So maybe the pic would have been a little darker.

    Points, I think the color of the pudding is perfect. Any darker would have made it an odd color.

    It's time. Made the second batch of pudding.
    Used cream cheese extract instead of vanilla.
    Divided it up into 4 globular goblets this time.
