Caboose Baked Beans

Recipe by Grizzlybear: Caboose Baked Beans/saved
Beans have great flavor. Wish they weren't on the soupy side and more like baked bean consistency. Not adding the 2c saved bean water would go a long way to that end. There is plenty of liquid in the rest of the stuff that is added to the beans.
Griz was right. Use two crocks. OR, if I had thought of it earlier, cut the recipe in half.
Used Bbq Sauce with an added tablespoon of liquid smoke.
This is my second time using a brine to soak the beans. They were done in less than the simmer time but I went the whole time anyway. And as you have surmised, I did not pre-boil the beans.
I would also saute the onion first.
Meyers dark rum is an expensive little bottle.
Used up some of that pork roast I cremated the other day.

Wow this makes a TON!! Did you use the lima beans? I don't see them in your bowl. My family hates them lol, I like em! Glad you got rid of some of the pork jerky :)

They're in there. I hated limas all my life. Tried again this past year and I'm over the hate. Got a belly laugh over the "servings". Must be at least 4c per serving.

Let the crocks cool off with the lids off for a couple of hours. Extra liquid evaporated off and it is much more like baked beans and tastes better than it did when fresh hot.
I know I'm going to hurt myself eating more of this than I should.
    Nicely done Griz!

Wow, that sure does make a lot. I love beans but I think my head would hurt trying to cut that all down. I like the marmalade addition. Very nice idea. That is one great looking bowl of beans! I like my beans un-soupy as well.
