    Trying to use up some buttermilk...
    If you like Cajun seasoning (and I do!) you will love this! I didn't bother to measure the Panko.

    Just doesn't seem like 1/3c buttermilk is enough to coat all 6 pieces. I'd be tempted to rub the salt and Cajun seasoning into the meat first, dip in buttermilk and coat with Panko. Oh, and bake on a rack to keep from having to flip the pieces.
