Cajun Oven Fried Chicken Recipe

Ingredients
  • 1/3 cup low fat buttermilk
  • 1 tablespoon cajun seasoning (or you can use curry seasoning)
  • 1/2 teaspoon salt
  • 1 cup panko (Japanese bread crumbs)
  • 2 chicken breasts halved, skinned
  • 2 chicken drum sticks, skinned
  • 2 chicken thighs, skinned
  • Cooking spray

Directions
  1. Prehead oven to 400 degrees.
  2. Combine first 3 ingredients in a shallow dish.
  3. Place panko in a shallow dish.
  4. Dip chicken, one piece at a time, into buttermilk mixture; dredge in panko.
  5. Place chicken on a baking sheet lined with parchment paper.
  6. Lightly coat chicken with cooking spray.
  7. Bake at 400 degrees for 40 minutes or until done; turning after 20 minutes.
  8. Yield: 4 servings
