California Chicken Sandwich

    Yummy! I used some small yellow tomatoes I had on this, and I realized (too late) that I had no bacon *gasp*, I know. We ended up just sprinkling some bacon bits on top (not shown in the picture). I served it with Keni's Jalapeno Lime Slaw Very good!

    I love bacon...but I don't eat it often enough that I use an entire package before I begin worrying that I've had it in the refrigerator too long...so what I do that seems to work just right for me is roll up the individual slices, lay them on a baking sheet (not touching) and pop them in the freezer for several hours. Then I store the frozen rolled bacon in a freezer bag. That way I can pull out just a few at a time as I need them for recipes.

    I think I'm gonna try that cause we don't eat it fast enough either! The packages usually say use 7 days after opening so we would have to eat bacon every day to use it up that quick! Thanks for the idea!

    I keep my bacon in the freezer, too. Got my tip from Melissa D'Arabian. But I just cut off what I need like she does. I don't have room in my freezer for a baking sheet, even if only for a few hours. lol.

    A very good sandwich on homemade buns. Made a pic and waiting for my stomach to quit talking to me for it to get posted.
