California Chicken Sandwich Recipe
CALIFORNIA CHICKEN SANDWICH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 4 chicken breasts about 1/2" thick
  • 2 chicken bouillon cubes crushed
  • 1/2 teaspoon seasoned salt
  • 1 cup water
  • 8 slices thick hickory bacon sliced in half and fried until crisp then drain
  • 4 large tomatoes sliced
  • 4 large lettuce leaves
  • 1/4 cup prepared guacamole
  • 4 tablespoons mayonnaise
  • 4 large seeded hamburger buns
  • 1/4 cup melted butter
  • 3 tablespoons butter

Directions
  1. Mix bouillon cubes, seasoned salt and water.
  2. Pour over chicken and marinate in refrigerator 3 hours.
  3. Fry sliced bacon until crisp then drain and set aside.
  4. When chicken has marinated remove from marinade.
  5. Place buns that have been brushed on inside with butter in frying pan over medium heat.
  6. Grill inside of buns until toasted and golden then set buns aside on a serving plate.
  7. On medium heat place 3 tablespoons butter on a grill or in a fry pan.
  8. Braise chicken breast in melted butter and cook until done.
  9. Spread mayonnaise on inside of each top and bottom of buns.
  10. On bottom half place chicken breast, four slices of bacon and a serving of guacamole.
  11. On the top part of bun place a piece of leaf lettuce and tomato slices.
