Jalapeno Lime Slaw

This tangy, creamy slaw is so easy to toss together. It's great for a burgers on the grill night, a picnic or a Mexican themed summer meal. As with most slaws, the longer it sits, the better it is, so plan ahead at least a couple hours!
Ingredients
- about 4 cups shredded cabbage or cole slaw mix shopping list
- 1/2 cup mayonnaise shopping list
- 3T honey shopping list
- juice from 2-3 limes shopping list
- 2-4T jarred or canned jalapenos, diced shopping list
- 2t pasilla, ancho or chipotle powder shopping list
- 1t ground coriander shopping list
- 1/4 cup loosely packed fresh cilantro, roughly torn or chopped shopping list
How to make it
- Combine mayo, honey, lime juice, chili powder and coriander in large bowl, and whisk well.
- Add cabbage and jalapenos and stir to combine and coat.
- Let chill a couple of hours, if possible and stir well before serving.

Great slaw!!! I used all green cabbage and used a couple of fresh jalapenos for the canned cause I needed to use them. I never would have thought coriander in coleslaw, and it worked great!! Love the touch of sweetness from the honey too! My IMI ...more
