    I made this a couple of nights ago. It is fabulous! It is a perfect mix of meats and pulses, herbs, garlic, onions, white wine and fresh stock, resulting in succulent meat in a lovely gravy, with your starch component built in - it's well worth the extra step of soaking dried beans and doing them from scratch. It's an entire meal in one pot. It reheats beautifully too!

    Did you use the duck legs? I've never cooked with duck before and don't even know if I have ever even had it! I wonder if my family would like it? I'll have to look for it next time I go to the store (if they even have duck) and start with this recipe, sounds delicious!

    Yes, I used the duck legs. We love duck! Our supermarket sometimes carries them and it so happens that they had a special - they were half price, so this recipe was a must! The long, slow cooking produces meat that is very succulent and simply falls off the bone. I increased the oven heat a little as this is an adjustment I need to make for my quirky little oven. This is a very filling dish, owing to the beans, and very flavourful owing to the Pancetta, Toulouse sausages (very garlicky!) and duck, all of which have a high fat content - who cares as long as it's a now-and-then treat! I used six sausages instead of four - they come in packs of six and the two left-over sausages would have made my fridge smell entirely of garlic! Luisascatering's cassoulet recipe page has some step by step photos I sent over, and she has put together a great 'collage' of them along with my captions. I forgot to take a picture of the sausages as I browned them but you would get the general picture! I hope you enjoy it if you do get around to making it.
