Cauliflower-potato Soup

    It's a good soup. Lots of flavor. Did make a minor change.
    It just so happened I was watching an episode of ATK and they were doing cauliflower soup. It was basically like the authors except that they sauteed a clump, broken down into small florets, of the cauliflower in browned butter until it was soft and browned.
    I did that and used it as a garnish on top of the soup along with the cheese and chives.
    Yes, chives, instead of green onion. I have a bed of them growing and they are overly large and suits for green onion very well.
    All else was by the book.
    My result turned out browner than the authors or ATK's. And very thick too. I had to add a cup of water at the end to loosen it up enough to almost be called soup. I liked it thick.
    Of course, blending it with a stick blender as opposed to a potato masher did thicken it up a bit more than the authors pic.
    Didn't peel the potato as the instructions did not require it.

    Does this taste like potato or cauliflower or a mix of both? It looks like there is more cauliflower in the soup than potato though. I'm thinking some bacon on the top of this would be good. :) I like my soups really thick, too.

    It would be awfully good with bacon bits. I was thinking about that when eating the soup. It would deepen the overall flavor.

    I'm agreeing with the bacon! Bet it would be delicious in this. That is a good looking bowl of soup though, the browned cauliflower bits look so good! :)
