    Banana Coffeecake
    Two things right off, I may have used a spring form pan that was one size too large and I added walnuts. The flavor is very good but I was expecting more of a cake cake. This has happened to me before when baking with bananas. When it cooks it comes out a bit gummy. I was very faithful to the baking time and do believe it was in as long as it should have been. Toothpick did come out clean.

    Mr. SuchAFuss said, "tastes good just put some whipped cream on it and don't think of it as a breakfast cake.". He's so practical. Flavor is good and it will be eaten. Not sure I'll make it again.

    I had bookmarked this to try. I have tried banana breads that have come out gummy as you say and figured I did something wrong. Could it be the nuts? I generally will add 3/4 cup of chopped almonds when making a banana bread. I also wondered if I over mix. I think Ive read that cakes shouldnt be over mixed but figured I wouldnt have that problem since I mix everything by hand and not a mixer.

    Personally I think it is a banana thing. Maybe too much banana. I used 3 banana's would 2 have been better? Shrug.. Bananas come in many sizes.

    I did a bit of research on why? Apparently over mixing is a problem with bananas. This is what "Going Bananas Over Baking" stated. Right before using in a recipe, mash them well with a fork so they retain texture and some chunks. Don't blend them smooth in a blender. This can cause your baked goods to become too dense, gummy and rubbery. I will keep this in mind when I make anything baked with mashed bananas. Your pics look good and Bravo to MrSuchAFuss.     He's a kitchen nerd on TV...well, he used to be, dunno if he still is.... I don't "watch" him, but I HAVE seen him .... cus I liked the way he used science and good ol' values like "multi tasking" instruments, homemade gadgets or vessels like his smoker, and I just remember he once said that your hands are you best kitchen utensil. :-)

    I use my potato masher on my bananas and leave them a little chunky. That's probably why I've never had the gummy problem. Hands is a good option too ;)
