Banana Coffeecake

BANANA COFFEECAKE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the White Estate in Frisco, Texas in 1984.
Ingredients
- Batter shopping list
- 1 stick margarine at room temperature shopping list
- 3 large bananas mashed shopping list
- 1 egg white whipped shopping list
- 1 tablespoon lemon peel grated shopping list
- 1 teaspoon vanilla shopping list
- 1/2 cup skim milk at room temperature shopping list
- 2 cups unbleached flour shopping list
- 3/4 cup granulated sugar shopping list
- 1 /4 teaspoon salt shopping list
- 1 tablespoon baking powder topping shopping list
- 1/3 cup brown sugar packed shopping list
- 1 /3 cup unbleached flour shopping list
- 3/4 teaspoon cinnamon shopping list
How to make it
- Preheat oven at 375 then spray a spring form pan with cooking spray and coat lightly with flour.
- Combine margarine, bananas, egg white, lemon peel, vanilla and milk.
- In another bowl combine flour, sugar, salt and baking powder.
- Mix wet ingredients with dry ingredients just until moistened then pour into prepared pan.
- To prepare topping combine brown sugar, flour and cinnamon then sprinkle over batter.
- Bake 45 minutes then allow to cool before serving.
