Chicken Alfredo Pasta

    Pasta, pasta, pasta, Yum, yum, yum.
    Good Alfredo sauce. I went light on the salt and am having to add more on the plate. Serving stands tall on the plate.
    Very quick to put together.
    Used angel hair pasta.
    Used dried herbs.
    Didn't have any heavy cream so I added another stick of butter and some 2% milk to sub for the heavy cream in the sauce.
    Didn't have to use the broiler, as the mozzarella was already browned.
    Pasta sucked up the sauce and made it a less than creamy texture. But I wouldn't shake a serving spoon at it.
    Nixed the chicken. Mother just wanted some "pasta with gravy".

    Look at my new kitchen toy. It's a 'shroom slicer. I have always used an egg slicer in the past. The kind with wires as the slicers. And have always broken a wire or two. This new toy ain't gunna break. The wires are replaced by thick metal slicers. And it will slice more than just 'shrooms. Bought it in Chef's catalog online. Nobody locally had it.

    I make my own butter. Two cups heavy cream makes 18 Tbsp butter with a milky whey left over. I just reversed the process using my 2%milk. It's not a true heavy cream because the butter is not incorporated back into the milk. I don't have one of those fancy gadgets in England that lets one incorporate the butter back into the milk. It's a press that forces milk and melted butter through a fine spray nozzle at the same time.
    But for baking just stirring in extra butter to milk will suffice for the faux cream.

    No mushroom slicer here, either, but I could definitely use one! We do use cream in cooking, and I had not heard of the faux cream solution. Will have to remember this one. Your picture looks really good!
