Chicken And Rice Casserole

    Recipe by Dedi: Chicken And Rice Casserole/saved
    Had some homemade French sour cream and chicken broth and chicken pickens from the broth that needed a home from a left over meal. Threw them in with some homemade "cream of" soup powder to make this delicious meal.
    Even took a special trip to the store to buy some minute rice and Ritz crackers to make the recipe come out right. I would normally try to use regular white long grain rice but didn't want to booger up the recipe and have the rice come out undone or not have enough liquid in the mix. As is, all came out exactly to spec. It's good comfort food.
    Might could use a touch of salt but I ate it straight up. Mother liked it too. She was finished with her helping before me.
    Probably could have used a couple more minutes in the oven to promote more browning on the topping.
    Nixed the sauteed onion as the day was getting long in the tooth.

    What a nice looking comfort food pic! I bookmarked it but I do have a question. We don't get Ritz Crackers in a sleeve or tube here at least the ones I buy. How many would you think might be in a sleeve or tube of them?

    Package style changed since last I bought them. It is more squatty now. Counted 30 to a sleeve. Still 4 sleeves per package. Didn't notice the price go down so I guess the company is turning more of a profit. And there was plenty of crumbs to cover the casserole.
    Yes a whole stick of butter. There are some knock-off buttery rounds around but they just don't compare with Ritz. And I don't see any recipes to let me make them from scratch. Although I do have a couple/three homemade saltine cracker recipes bookmarked.

    Thanks Points:) I will make a note of that. Everything seems to come in smaller packages etc. now and we still get dinged for the same price! You are right nothing compares to a Ritz Cracker and I have never seen a recipe for them made from scratch.
