    I had some snow peas that I had to use up and made this for dinner tonight. Very nice and easy stir fry. I tripled the recipe easily. I wasnt sure what a spring onion was. I thought it was the ones that look like green onions but with the golf ball on the end but cutting them the length of the snow peas didnt seem right, and couldnt tell by looking at the recipe pic. I had green onions and used those. I also added water chestnuts...... just cuz. This was very good. Thanks for a great recipe, Joe

    yup, green, spring and scallion are the same .... any of those can have a rounder, larger globe, but they are generally harvested while the bulbs are slimmer.

    But, different varieties look different ....

    a leek is what I think of as a green onion on steroids ...

    and a shallot looks kinda like a medium red onion ... only lighter skin and often with more than one clove to the bulb ...

    Again, because they are really all interchangeable, just different varieties ..... I know they are usually called Spring onions in Europe.

    The point is...you done good! hehehe...if you used a "green" onion and there recipe said spring, you're spot on!

    What I saw was labeled as a Winter Onion, which is the same as an Egyptian Onion it seems. No pictures though. :( I did a Google Image search for Winter Onions and there it was!

    Yeah that picture looks exactly like the onions in my grocery store labeled spring onions! I have never tried them though.

    I like red onions on my burger, but if I'm out I'll use white because it still tastes onion-y. As for cooking, I use either one depending on what I have. But - that's just me and others may feel differently. I've known some people to swear by Vidalias in most recipes, especially for French Onion Soup. Until recently, they were hard to get around here so I've hardly ever used them.
    The only thing I would not substitute is leeks. Leeks are leeks. Accept no substitutes!

    A quick, easy, healthy dish. I doubled the sauce ingredients, subbed rice wine vinegar for rice wine (I know it's not the same but that's what I had), subbed canola oil for peanut, and added a pinch of red pepper flakes and some sliced baby bella mushrooms. Added a pic to the recipe page.
