Chicken Enchilada Bake

    A recipe from Pleclare Chicken Enchilada Bake/saved

    This was quite easy to put together and really tasty! The only problem I had, for some reason the sour cream curdled a bit..I don't really know why (Points might know)..maybe if it were mixed with the enchilada sauce and then added to the casserole? The heat was too high? I really would like to know because this is such a good recipe!!! I think Creme Fraiche would be a good sub for the sour cream the next time I make this. The only changes I made were 2 cups of shredded Monterey Jack cheese & less chicken (must have been a small rotisserie chicken!) which worked out fine:)

    Creme Friache would be a great sub. The high butterfat will keep it from curdling.
    Creme Friache is easy to make at home.
    Or cut the sour cream with flour or cornstarch/potato/ or tapioca.
    Use room temperature sour cream.

    It will get thicker the longer you let it set out. And then thicken up some more when put in the fridge. And then get nice and thick if you choose to whip it. Whip it good. : )

    It was super easy, and really tasty..next time I'll try creme fraiche instead of sour cream though. A good weeknight I don't feel like making dinner meal:)
