Chicken Sausage With Butternut Mash And Onion Gravy

This was fantastic! Michael was very skeptical of everything but the sausage lol. He ate every bite on his plate and then was eating off mine. The onion gravy goes perfect with the slight sweetness from the mashed butternut. Oh, I thought we had Brandy, but all we had was vodka, whiskey and scotch. Looked up a good substitute and white wine was mentioned a couple times and I happened to have some, and I thought it worked great. Will definitely be mashing up butternut squash more often :) Forgot to add the fried sage leaves in the picture and I did add some in the gravy as it was cooking too. Also, for some reason I read finely chopped, instead of finely sliced on the onion, oh well.

Thanks Janet :) Butternut squash is one of those things we have had only a few times and I usually cube it and mix with a whole bunch of other root veggies and bake. Never had it on it's own, until now!
