    A really light and fluffy filling with a very deep chocolate taste! I had a bit of trouble beating the cocoa powder into the cream cheese. Cocoa powder went flying everywhere on the first beater spin. I have a 30 year old mixer though with small beaters. That may have been the trouble. One of the more "modern" pro type mixers may make the job easier. Still - after all the work, it sure was worth it. Used a store bought large size graham cracker crust.

    Your mixer sounds like my ancient blender. Did you have cocoa powder all over your face like when the 3 Stooges cook : )

    Yes, Mr. P, there was cocoa powder everywhere!! The only difference between me and the Stooges was they never seem to have to clean anything up. I did. :)

    No trouble folding in the cocoa powder with the electric mixer. Beat the cream cheese 'till fluffy first.

    I think my cocoa powder trouble is my mixer. Poor thing is 35 years old. A gift from my parents when I moved out and my very first appliance. Its getting to where it smells hot when I use it. I should trade it in for a new model, but I get misty-eyed just thinking about doing it. :)

    Turns out mother was not hungry enough to eat a mousse. She's been munching on shortbread cookies all morning.
    My first impression is it's heavy with cocoa but I'll have another slice later and not try to eat the crust.

    It is pretty chocolate-y. I guess some whipped cream could cut that bit, although everyone in my family refused it! :) It made a great breakfast the next day, too. :-P

Maybe that's not a good descriptor. Maybe it's the powdery quality of the cocoa shining through. The cocoa was never melted into the mix, but exists as a part in the conglomerate. The silky smooth quality of a mousse is what is missing.
