    I love very strong dark coffee too. When I brewed a pot of the Café du Monde and chilled it, it had a bitter undertone which I'm thinking is from the acidity. The cold brew was fantastic ... no bitterness, no acidity, smooth and wonderful. I often use leftover regular strength coffee from the pot my DH brews in the morning and chill that and find the stronger cold brew better. I love ice coffee and prefer it over hot. They say the cold brew can be heated.

    It's always summer here Nadine so this is perfect for me. I just may have to switch to decaf its that good so I don't get a huge caffeine buzz from drinking too much. (LOL!)

    I put about half a pound of course ground beans in a pitcher with 5 cups of water. Can't wait to try it tomorrow! I used the coffee beans that I put in the freezer awhile ago because I found it really acidic. Hopefully this solves the problem!

    DH and I made cold brewed coffee once and loved it! The taste is so pure. I like that this recipe makes a concentrate. I'm going to have to give this one a try.

    So, after sitting in the fridge for almost 20 hours, I strained it this morning. I used 5 cups of water to half a pound of coffee beans, and ended up with 4 cups strained as the grounds held on to some of the liquid. (I left it straining while dropping the kids off at school and got a few drops more). I strained it with a fine mesh sieve, and it worked perfectly. It also fit perfectly into a large mason jar.
    I heated up a cup with a 3-1 ratio of coffee to water. I tried it black at first, and it is definitely smooth, no sourness or bitterness. I like a touch of sweetness to my coffee, but after adding some coconut milk to it, I didn't need the extra sugar. I guess it tastes sweeter because it's less bitter.
    I didn't find it as dark as I like it, so I might drink it straight next time! (I like it strong!)I'm going to try it iced this afternoon, I think that's the best use for it. Unless you're a one-cup-of-coffee person in the morning, or you fill up a travel mug to go, then this is perfect for you! Just heat and go :)
    I'd glad I used up these beans that were too bitter for me, a great use for it. It does use a lot more beans than hot brewing, but it was worth it for me in this case. I might grind the coffee a little finer next time so I get a stronger brew.
    I can see using this method all summer long, and I might freeze some in ice cube trays for iced coffee and frappe's! :)

    Happy it worked out for you Shona. Everyone has their preference for what beans they like, strength, and roast that's for sure, a few tweaks here and there and you'll have it worked out.

    I don't get this diluting it down thing ... I like my coffee strong enough to stand a spoon in (LOL). It really does tone down bitterness Frankieanne and for as strong as I make and like coffee it's ideal.
