Comforting Quinoa Squash Soup

    Recipe by Mystic_river1: Comforting Quinoa Squash Soup/saved
    A good tasting soup. I subbed yellow squash for the zukes. Used white onion from my garden. Used powdered bouillon and didn't have to use any S&P.
    Did some reading on Quinoa as this is the first time for me. Simmer time is supposed to be exactly like rice but this recipe is a little shy of the simmer time. I increased the simmer time so that the quinoa would not be too hard for me.

    I personally really like quinoa. I think it's the texture that would make someone either love ot or hate it, because on its own it really has no flavor. This soup looks great Points!

    I've read that after the quinoa is rinsed it should be dried and toasted to bring out more flavor. This recipe didn't do that. But I've the ingredients to make this recipe again.

    Made this again. Tripled the chicken 'cause I didn't want to look up another recipe to use the excess. Toasted the quinoa after the rinse. If you're looking to reduce your salt intake, this can use some but is good without. Cumin holds sway in this recipe.
