Corned Beef Roll Ups

  We love corned beef, and I was happy when I found thinly slice corned beef in the lunch meat section at Trader Joe's! I made this for Michael, but I snuck a small bite and it was very good! I decided to go lighter and have mine sprinkle over a salad. For the slaw I used broccoli slaw (which kind of looks like what Keni used) and used a coarse grain mustard, although I do know thousand island would have made this taste more like a Reuben, but either way, it's good stuff. This corned beef was not overly salty at all, as some can be from the deli. Definitely recommend TJ's sliced corned beef!
