CrazyCooker's Smashed Potatoes

    I made this for breakfast with a few changes. I didnt use caraway seeds, and I added 4 eggs on top. Oh, I also did the potato in a skillet instead of the oven. I really like the smashed crunchiness of the potato under all the runny egg yoke. Awesome breakfast, and would also make a great dinner. Its hard to tell, but there is a potato under all that egg I almost forgot to take a pic as you can see that almost half the potato is gone: ) Thanks CrazyCooker for a great recipe

    I love cooking potatoes like this although I usually cook them in a bit of oil in a saute pan after smooshing rather than baking. I never thought of an egg on top though! Great idea!

    Is saute pan just another term for skillet? If so, that is what I did.

    Yes, I guess so, MrP. I think of a saute pan as being thinner than a skillet. I use a little non-stick pan when I make these potatoes. Its definitely thinner than any of my cast iron skillets! :)
