How to make it

  • Cook potatoes in microwave if using fresh
  • Preheat oven to 400 F
  • line cookie sheet with foil
  • drizzle evoo on foil
  • Sprinkle with some of the seasonings
  • take a potato and place on mixture then smoosh with a salad plate (until about 1/2"-1" thick)
  • repeat with rest of potatoes
  • drizzle some more evoo on top of potatoes and sprinkle with some more seasonings
  • Bake for aprox. 15 minutes
  • Potaotes should be crunchy and golden on the outside but smooth and creamy on the inside ENJOY!

    I cook potatoes like this all the time. When I bake potatoes, I always make a couple of extra just so I can do this! I love how crunchy they get. I have a picture of a potato cooked like this in my photos here. :)
