Creamy Chicken Enchiladas

    Recipe by Carasings: Creamy Chicken Enchiladas/saved
    Took these enchiladas out of the admitted bland arena by the author with the addition of peppers, onions, garlic and tomatoes to the innards of the enchiladas, sauteed of course. Upped the cheese to 2 cups and doubled the cream of chicken soup as, eyeballed, it didn't look like enough. Soup was made from scratch using a little of the chicken from the poaching and a home-made "cream-of" soup powder.
    Also since I added all the extra ingredients, I upgraded to a 10X15 casserole dish.
    It's a very good dish. Mother liked it a lot and she usually screws her nose up at south-western style cooking.
    Used this recipes method of poaching the chicken after trying another recipe with dismal results.

    That was pretty upfront of her to admit they were bland. Then others can jazz them up as they wish. Garlic and onion would definitely go in around here, too!
