Creamy Corn Soup

    Creamy Corn Soup With Manchego Cheese/saved#
    It's ah-mazing! I've never made a corn soup before. Love soups and had some extra cobs of corn from the Farmer's Market so this was a given to try. :)
    I halved the recipe since there is only two of us and I wasn't sure initially that I was going to love it. My favourite part is the heat from the Jalopeno (perfect) mixed with that fresh corn flavour. Also has potatoes, a red pepper and tomatoes in it so I'm getting my veggie intake. :) The only thing I did differently is used chicken broth instead of vegetable stock. Found the Manchego cheese at a Cheese shop and it matches perfectly with this.

    I do admit to going out to buy a small carton of half and half especially for this recipe and used a half a cup since I halved the recipe. Jim and I don't usually add cream to anything, or half and half. The soup is awesome. But I bet you could avoid using any cream at all and the difference would not be major.

    I was craving soup, so I found this in my bookmarks and decided to make it for lunch! It really hit the spot for sure! I didn't have Manchego (don't think I've ever even tasted it before) so I used parmesan instead. Instead of pouring half into a blender I just took a stick blender to the whole pot and pureed until chunky. I love it! Added my picture :)

    Unaged has a soft texture and is for melting.
    Aged is for sprinkling.
    It is, if I am correct, goat cheese.
